Hello, I'm Chef Eian Kittichai or Pongthawat Chalermsukh. My journey started from cooking at home where I sold rice and dishes. After that, I thought it could be an inspiring experience to cook, especially since I love eating too. 😄

Today, I'm going to make Salmon Wellington. I'll show you how using an oven Irinox krub

Let's get started. After preparing the fish, I soak it in water to brine the salmon for better flavor. Once the salmon fillet and the whole fish are brined, we wrap them together with a sheet of puff pastry and roll it with plastic wrap.

And then we put it into the Irinox refrigeration unit again, to rapidly chill the meat and fish (a crucial tip) and also to maintain the shape of the ingredients as bars, preventing them from losing their shape and ensuring that the appearance of the dish is beautiful.

After finishing, the next step is to remove the salmon from the Irinox unit, unwrap the plastic wrap, then wrap it with green moss, and finally wrap it again with plastic before placing it back into the Irinox unit for further chilling.

After that, wrap it with puff pastry and then place it back into the Irinox unit for further chilling.

You'll notice that each step I mentioned helps to shorten the cooking time for me. Using rapid chilling ensures consistency and control, keeping the texture of the food fresh and consistent. Once it's done chilling in the Irinox unit, we're good to go.

The final step is to place the puff pastry, which has been brushed with egg wash, on top. The egg wash gives it a nice golden color when baked.
